Introduction

The integration of solar energy into the drying system of cocoa beans has shown great potential in improving the efficiency of the drying process. Methodology

The material used in this study is fermented cocoa beans. The variables changed in this study are the absorbent mass, namely 1 kg, 2 kg, and 3 kg. The drying process is carried out by utilizing solar energy during light hours, starting from 9 am to 5 pm, and continued with the use of absorbent at night, from 5 pm to 9 am. This drying process is carried out until the mass of cocoa beans is stable.

Results

The best results of this study were obtained by comparison of the mass of cocoa beans and absorbent 1: 3. During the period there is no sunlight, the mass of cocoa beans is reduced between 19% to 24% with a relative humidity range (RH) 41% - 79%. The effective diffusivity value of cocoa beans is found in a range of 1.16 x 10^-10 to 1.38 x 10^-10 m²/second. The kinetics model that is most suitable for the cocoa drying process is the page model. The measured lowest specific energy consumption is 10.40 mj/kg wet cocoa beans. The average drying rate obtained is 0,0004 kg H2O/hour/kg dry mass with a moisture content of 4.63% and the total drying time reaches 26.8 hours.
