Introduction

Analog rice is a staple food alternative made from ingredients other than rice and flour, designed to replace rice in a daily diet. This study aims to explore the nutritional content and physical characteristics of analog rice which has low carbohydrate levels and high fiber, which will certainly be liked by the community. In the manufacture of this analog rice, raw materials are used in cassava starch, corn flour, and breadfruit flour.

The method applied in this study is heat extrusion using extruder devices. The research process is divided into several stages, ranging from determining the best formulation, physicochemical characterization, to sensory assessment using the hedonic method. From the results of the study, the best raw material formulation was obtained consisting of 70% cassava starch and 30% corn flour. For breadfruit flour, an addition of 5%, 10%, and 15%, and the best formulation is obtained from the addition of 15% breadfruit flour.

The addition of breadfruit flour as much as 15% turned out to give significant results, with fiber content reaching 26.13% and carbohydrate content of 67.70%. This shows a very striking difference compared to conventional rice, which generally has higher carbohydrate levels and lower fiber.
